KATHMANDU: Sudip Ghimire and Ganesh Karki have prepared to run the restaurant inside the vehicle. Named ‘Amigo Food Truck’, the restaurant is set on a bus and has the convenience of being transported from one place to another like a car.

Inside the bus, there is a kitchen, shower, table and even a place to spend the night. It has a roof top as well as a well-equipped restaurant. The roof top has been constructed by making the roof of the vehicle systematic. A ladder has been arranged from the ventilator to go to the rooftop. The driver said that the rooftop will be folded while the vehicle is running. A comfortable chair has been arranged by pulling out the seat of the bus.

As this bus is also used for night out, it has been arranged to sleep up to 20 people. They are installing solar panels keeping in mind the possibility of going to the forest at night. A flickering light has also been arranged for the festival. This restaurant is useful to enjoy a small number of events including birthdays, meetings, picnics, some distance from the city.

Ghimire and Karki have started operating in Nepal by making some changes in the concept of the food truck they saw while working abroad. This is probably the first time that Gudne Restaurant has come into operation, even though it was developed and operated as a restaurant in Nepal.

As both the operators are cooks for the food, they are ready to serve it themselves at the initial stage. The two, who are learning to drive, currently have a driver. Anyone who says to go out has a problem with management. Addressing this potential problem, they have started operating this restaurant as a solution.

Necessary water is stored in the bus and waste water collection tank is also provided. For other garbage management of the restaurant, the operator has taken the membership of garbage management from the municipality.

By buying and repairing the stalled bus, they have turned it into a restaurant. The operator of the old bus bought for Rs 1 million has estimated that it will cost Rs 2.5 million to complete the preparation.

Their plan is to serve in Bajra Barahi from Sunday to Thursday and in Godawari on Friday and Saturday. By registering in PAN, they have taken the work of the restaurant forward.
